Hello my dear readers. Due to a serious lack of inspiration and creativity I have been absent for a long, long time. For those of you who were hoping that my return would mean that I would finally stop with all the superhero references in my soup blog, I have sad news. It's only been a couple of weeks since I went to see Avengers Infinity War, and since then my superhero references have been unstoppable! On top of that I have also been diagnosed with severe iron deficiency anaemia last week, which means I am forced to drastically turn my entire diet around to a diet that primarily includes foods high in iron.

At least for now I am, and it has given me new inspiration for some recipes to come up. As a diet always obliges you to be creative!

What is this anaemia thing that you're talking about? It sounds pretty serious!

Anaemia is a lack of haemoglobin in the red blood cells of the blood. Haemoglobin is a material in red blood cells, which helps the transport of oxygen towards muscle cells and this is what gives us energy. A lack of it can cause a.o. fatigue and dizziness. So I'm basically tired all the time.

Can you die from it?

Because the heart now has to pump twice as fast to provide your muscles with oxygen, anaemia can lead to heart diseases, which can eventually become fatal. However, anaemia in itself is harmless and is really easy to diagnose (with a simple blood test) and it's really easy to treat with supplements to boost your iron levels on a short term and a healthy, iron rich diet on a long term.

OK that's wonderful and really sad to hear you've got anaemia and stuff, but what does that have to do with me?

A lot of people have iron deficiency without even knowing it! (So if you've been feeling tired lately, I would definitely recommend to have it checked). Iron helps you to build haemoglobin, which gives us energy, and so inevitably a lack of it can make us feel exhausted.

But even if you don't have anaemia, iron is generally found in meat and seafood, which are also rich in proteins!

Sure, but I'm a vegetarian!

In that case vegetables (mainly green, leafy vegetables such as spinach and kale and beans) and fruits (especially dried fruits or dark fruits like blueberries) are great sources of non-heme iron, and there will be loads of healthy vegetable soups on my blog!
