Gazpacho

Soup usually is something that warms you up on a cold winter's evening and thus something people usually crave when it's cold. So with a heatwave like this in the air, what's a poor soup addict to do?

Luckily the Spanish have found the perfect solution to this dilemma: gazpacho. A chilled vegetable soup that is simple to make, does not require any cooking (no hot hobs!) and is thus perfect for a summer evening.

Things you'll need:

  • 500 gram tomatoes

  • 1 large cucumber

  • 1 onion

  • 1 red bell pepper

  • 1 stock cube

  • 500 ml water

  • Salt and pepper according to taste

  • A tablespoon of olive oil

  • A table spoon of vinegar

  • Sun dried tomatoes in a jar (for garnish)

How it's done:

  1. Dice the vegetables and throw them in a pot

  2. Season with the salt, pepper, oil and vinegar and mix them

  3. Crush the stock cube and add to the mixture

  4. Blend everything together with a stick blender

  5. Add the water and blend again

  6. Serve the soup in bowls and garnish with the sun dried tomatoes

  7. Serve with some garlic bread
